I would like to know which Ipaq and Axim programs are available for wifi control of which Music Players or Programs. Is this the right way to ask this question? Anyone care to start?
I am using my wi-fi PDA with a Squeezebox. There is a PDA"skin" for their slimserver software. Works well (and it's free!).
See the various Squeezebox threads for more info.

Xlobby

I used it with winamp, works well. Wish I had a multiple audio card to explore this.
Also used it with a PPC, nice interface. A little cumbersome at first but after learning curve is over (1 hour) everything was good.
Hope this helps.

Netremote has plugins to control J.River, Itunes and WMP:

I found my iPaq 3950, using the Nevo app, had far too little range compared to a standard IR remote. Didn't really work at all outside of a 10-15' area. YMMV.

he's talking about communicating to a pc from his pda via wifi, not IR. My recommendation would be netremote if you want to use jr media center, or xlobby if you use winamp.
The biggest problem - and the reason I sort of gave up on a PDA remote after trying it - is there's not nearly enough hard buttons. After getting over the initial "wow" factor, I found myself hunting for my old hard-button remote.
I'm looking forward to seeing the Nevo-SL (http://www.mynevo.com/MyNevo/Updates/NevoSL_productsheet.pdf) remote, which I think was announced at CES. It's a Pocket PC, but built with a special remote-control form factor case, instead of the normal PPC case. Lots of hard buttons, and specs say it does both IR and wi-fi. Looks very cool, and probably very expensive....

From cnet.com:
At roughly $800 (pricing was not final at press time), the Nevo SL targets the upper echelon of home electronics enthusiasts. It will be sold via custom installers, not in retail stores.
Looks like I'll still be looking at PDA solutions!
Check out RemoteAmp to control WinAmp over wifi, I control my home music distribution with it and it works reasonably well.
