Or is my Anthem doing all the processing?
I ask this because I tried a Denon 1910 in my system and noticed a difference. From what I understand the DVD player should just be send the data to the reciever to be proccesed there.
But I noticed that the Panny has a bunch of audio settings
Any thoughts

It does, but you don't have to use them.
You can use the players on board DACs (digital audio converters) and Dolby decoder to output 2 channel or 5.1 channel analog audio to your pre amp or receiver or you can output the bitstream via an optical or coax connector and let your receiver's DACs and Dolby decoder to convert the digital signal to analog.
You might want to try changing the digital output frequency (depending on what your receiver will accept) as shown on page 16 under the Audio tab instructions
The other settings like dialog enhancer and multi-remaster are options you can try if you like.
Mine is connected optically to an Onkyo receiver and I have not tried the analog outputs nor any of the audio settings discussed on pg 9 and 15 of the S97 user manual.
